BOILED BEEF


INGREDIENTS

5  pounds meat for boiling
3-4 carrots, in chunks
2-3 zucchini, in chunks
1 leek, in pieces
1 celery root, in pieces
4 small onions, whole
2-3 branches parsley
3 cloves stuck in an onion
10 peppercorns
2-3 potatoes into pieces (optional)

Persons: 5-6

Preparation time: 30 minutes
Cooking time: 3 hours

INSTRUCTIONS

Put the meat in a saucepan with water to cover it, on a medium heat. Remove the foam that forms on the surface as the liquid approaches the boiling point. Pour some cold water to the boil and delay n 'remove all the foam. Add all remaining ingredients, cover and simmer the meat on low heat 1 hour. Open and remove with a
 slotted  spoon vegetables, not over cook  and melt. Cover and continue to simmer the meat 1-2 hours to soften well. Remove from broth and allow cooling. Cut into slices and serve garnished with vegetables, accompanied with the mustard, mayonnaise or other sauces. The broth is suitable for soup or risotto.
